There are two recipes for pudding, I believe there is another recipe for chocolate pudding. So we are just going to hijack one of those and make a vegan vanilla pudding with avocados. Here we go.

Vegan Vanilla Pudding Recipe – Avocado Pudding Recipe
We are going to start this recipe by adding the meat of one avocado to the food processor.
Now that we’re going to add in half of a frozen banana. Now my bananas, I just so happen to have a bunch that were ripening and I froze them, but it is really not imperative that your bananas are fresh or frozen for this recipe.
How to make it :
- Give that a good blend. Stop it and scrape down the sides. Next we are going to add in vanilla extract, a dash of cinnamon, and a dash of ginger.
- You can leave out the dashes but it is really imperative that if you want vanilla pudding, you have to put in the vanilla extract. Give it a blend again, and then slowly I am going to drizzle in almond milk. If you want it to be really thick, you don’t have to put in any almond milk, but if you want to kind of thin it out, make it easier for babies or children or if you just like a thinner texture for you pudding put the almond milk in and continue to blend.
- Once thats done you can scrape down the sides and bowl it up. And your pretty much done. It is a really quick and simple recipe, now I have to be honest it did have a medicinal green tasting quality to it. Along with the delicious vanilla flavor, but you can easily fix that with a little agave nectar, a little maple syrup, or I added a little bit of powdered sugar. But you don’t have to add that if you are used to the healthy taste then go ahead, it is just fine.
I can eat it as is but I know everybody has different taste buds when it comes to that type of thing. You maybe thinking this is vanilla pudding but it is green. Nobody is going to eat this. Well let me tell you, if you have kids, you can just tell them it’s from Dr. Seuss. Like green eggs and ham.
Now anybody else, you may have to sell it to them, I don’t really know how. Maybe have them just taste it first with a blindfold on. But, it is really fun and adventurous. I love the diversity using the avocado.
