Tomato basil soup recipes are wonderful in both winter and summer. I like to use fresh tomatoes and fresh basil. You’ll love my easy Summer Tomato Basil Soup:
I created this tomato basil soup recipe on a fine summer afternoon when I only had a few fresh ingredients kicking around my kitchen. It can be prepared in minutes!
Because this tomato soup recipe is a summer soup, I strongly recommend using heirloom tomatoes picked at the height of flavor and ripeness. YUM! My favorite are the yellow heirlooms!

Tomato Basil Soup recipes:
You will need:
- 1 large or 2 medium fresh tomatoes, chopped
- 1 large handful of fresh basil leaves
- 4 medjool dates, pits removed
- 10 sun dried tomatoes*
DO NOT ADD WATER!!!
*This recipe serves 1 person. If you wish to serve more, double the ingredients for 2 people, triple for 3, etc.
*I buy my sun dried tomatoes from a wonderful online company called www.olivenation.com. A huge bag of them costs about $10. I keep the bag in my refrigerator and it lasts me for months. I buy their Sulfite-Free brand of sun dried tomatoes.
Place all ingredients into a blender. Blend on a lower setting until the soup achieves a somewhat smooth consistency (there should still be a tiny bit of chunkiness).
It’s ready to eat! Note that this tomato soup recipe is not heated, but rather served at room temperature. This is a PERFECT refreshing lunch on a hot summer day. 🙂

This tomato soup recipe has such a delicious, thick consistency that it can also serve as a sauce for plain steamed potatoes over a bed of chopped lettuce (steam the potatoes for approximately 10 to 12 minutes, until soft):
