Sun dried tomato recipes are built around one of my very favorite foods: tomatoes. YUM! Sun dried tomatoes pack a potent and flavorful punch and are an excellent addition to many easy healthy recipes.
Like this low fat homemade salad dressing:
You won’t believe how tasty this homemade salad dressing is! I use it all the time.
The best part is it doubles as a sauce you can use with chicken and potato dishes!
Sun dried tomato recipes:
You will need:
- 1 red bell pepper
- 1 roma tomato
- 8 to 10 sun dried tomatoes (pre-soaked for at least 1/2 hour)
*I buy my sun dried tomatoes from a wonderful online company called www.olivenation.com. A huge bag of them costs about $10. I keep the bag in my refrigerator and it lasts me for months. I buy their Sulfite-Free brand of sun dried tomatoes.
- Cut tomato in half and place in a blender.
- Cut red bell pepper into pieces (remove stem and core) and add to blender.
- Blend the tomato and red bell pepper until very smooth. DO NOT ADD WATER!!!
- Add the sun dried tomatoes and blend until very smooth (there should be no chunks!).
