Strawberry Dessert Recipes: Try my Strawberry Coconut Ice Cream!
Strawberry dessert recipes can be made quite simply with a few delicious ingredients, including fresh strawberries. My Strawberry Coconut Ice Cream has only four ingredients and guess what? They’re all super good for you!

I’m a super healthy eater but I also have a sweet tooth!
In truth, I stopped eating white sugar in 2008, but I still want to enjoy some really tasty desserts. I’m here to tell you that you don’t need dairy products or white sugar to make some super sweet and tasty desserts!

Strawberry dessert recipes: Strawberry Coconut Ice Cream:
- 10 fresh strawberries
- 3 tbsp shredded unsweetened coconut
- 1 tbsp raw organic honey
- 4 frozen bananas* (Simply peel the bananas and pop them in your freezer before you go to bed at night. When you wake up, they’ll be ready for you).
*For maximum flavor, make sure your bananas are fully ripe before you freeze them! Never use unripe bananas in your recipes. They should have plenty of brown spots, like this:
- Remove the frozen bananas from the freezer about 45 minutes before preparation, in order to slightly soften them.
- Place the fresh strawberries, coconut and honey into your Vita-mix or other high-speed blender and blend until smooth. DO NOT ADD WATER!!!
- Add the frozen bananas and blend until smooth. You may have to stop the blender a couple of times and stir the mixture if it becomes stuck in the blades.
Once it reaches a very creamy and smooth consistency, it’s ready to eat!
This is a really excellent after-dinner treat in place of cake or other junky foods. You can even have it for breakfast!
MOM ALERT! This is a healthy dessert your kids will LOVE. Serve it to them in place of junk food, and don’t tell them it’s actually good for them! Its gooey thick sweetness will delight them! 🙂
TIP: Is there any greater smell in summertime than fresh strawberries? Place a bowl of fresh strawberries on your kitchen table when they’re in season and the smell will permeate the whole house…

I cannot more highly recommend the Vita-mix blender. It’s an investment of money, but I can honestly say it’s worth every penny. Finally giving up those cheap blenders and getting a Vita-mix professional blender was, for me, like getting out of a twenty year old pickup truck and sliding behind the wheel of a BMW! One of the best decisions I’ve ever made.
