Stuffed Chicken Breast Recipes with Mozzarella, Pepperoni and Red Pepper

You need 4 chicken breast whose bones removed but still have the skin, black pepper, pepperoni as much as 8 slices or more, shredded mozzarella cheese, 1 clove garlic, 1tbsp of olive oil, kosher salt, and red pepper that has been roasted and sliced into long stripes. If all of them are ready on the table, you can begin to cook.
First step is to slice the chicken. You can put the chicken on the cutting board or if it is not large enough, just put it on the clean surface of your table top. Then, rub the chicken with the garlic on all sides. Use the sharp knife, you can start to make a fillet of the chicken breast. Slice carefully without cutting the end of slice and make it like an open book. So, it makes the chicken breast become slighter and larger. Then, you should season all chicken sides with pepper and salt. Let it for some minutes to absorb the seasoning.
Second step is to cook the chicken on the pan or fillet. You can use the large skillet made of cast iron or stainless steel. Then, heat 1 tablespoon of olive oil on the fillet using medium-high heat. When the oil is warm enough, put the chicken breast in the fillet with the skin at the down side.
Cook the chicken until the skin look golden brown for 4 or 5 minutes, so it will be easier to move. After it, flip the chicken and let the other side brown too. If it is done, turn off the stove and let the chicken cool.
When the chicken is cool enough and there is no more smoke from it, you can continue the third step which is to stuff the cavities on the chicken with 2 to 5 tablespoons of mozzarella. Over it, you can put the some pepper strips that has been toasted before and some slices of pepperoni.
Cook the chicken in the oven to continue cooking it for about 8 minutes until cooked well and the mozzarella melted perfectly. The last, to make the skin and pepperoni crispy, you can cook it again for 5 minutes more.
