The crunch of raw kale combines perfectly with the creaminess of the avocado and the natural saltiness of the dressing. YUM!
Healthy salad recipes are, in fact, a little specialty of mine.
They’re all created with love in my home kitchen using REAL FOODS: whole, fresh, unrefined, divine.

One of my biggest healthy eating secrets is my discovery of green smoothies. Remember those dark leafy greens? Green smoothies are the BEST way to eat lots and lots of them, and reap all the benefits! Think: fabulous wrinkle-free skin into middle-age.
Kale Salad Ingredients:
- 8-9 large stalks of raw kale (I strongly recommend using lacinato or dinosaur kale), finely chopped into slivers
- 7-8 button or crimini mushrooms, thickly chopped, stems removed
- 1 1/2 tbsp raw sunflower seeds
- 1 1/2 tbsp raw pumpkin seeds
- 1 ripe avocado, chopped
- 3-4 tbsp nama shoyu* (unpasteurized soy sauce) or other high-quality soy sauce
*What is nama shoyu? It’s unrefined soy sauce: THE REAL THING. “Nama” means raw in Japanese. This stuff will blow your mind with its rich salty flavor:
That generic soy sauce you see on grocery store shelves should all be thrown in the garbage, and you’ll understand why when you taste nama shoyu!
How does generic soy sauce taste compared to nama shoyu?Think skim milk compared to whole milk. Pabst Blue Ribbon compared to Guinness.
Why? Generic soy sauce has been pasteurized, which means goodbye flavor! The result is a watered-down, sad imitation.
I order my nama shoyu from a fabulous online company called www.naturalzing.com. It’s cheap!
Of course you can substitute whatever soy sauce you’ve got on hand. I do encourage you, though, to get online and order nama shoyu for yourself! Use it wherever you would use soy sauce.
Kale recipes: How to make Kale Salad:
1) Place the finely chopped kale into a large bowl.
2) Add the mushrooms, avocado, sunflower and pumpkin seeds.
3) Last, add the nama shoyu and you’re ready to eat. Enjoy!
