Healthy Ground Beef Recipes

Ground beef recipes create dishes that health conscious people stay away from.  This however, does not mean you can’t make something healthy out of it.  Sometimes, all it takes is a little bit of imagination and research and you’ll be on your way to a healthy dish in no time.  It’s not all about the meat, there are a lot of ingredients you can add to make a dish less intimidating to people who think so much about their diet.

Taco Meatballs

Taco Meatballs:

•    2 large eggs

•    1 tsp black pepper

•    1 tbsp cayenne pepper

•    1 clove garlic

•    1 pc green onion (finely diced)

•    ¼ cup sweet red pepper (chopped)

•    1 ½ lb extra lean ground beef

•    8 oz sharp cheddar cheese (reduced fat)

Start the cooking by preheating the oven to a temperature of 425°F.  Cut the cheese into cubes and set aside.

In a separate bowl, beat the eggs well and mix the rest of the ingredients except the cheese.

Take 1 tablespoon of meat and flatten in a surface then place a cube of cheese at the center and mold a ball out of it making sure that the cheese stays inside.  Keep on doing this step until done with all the meat.

Spray some cooking oil on a cookie sheet sprayed with cooking spray and bake for 10 minutes until the cheese has melted and the meat is done.

Healthy Meatloaf:

  • 2 lbs extra lean ground beef
  • ¼ cup light sour cream
  • ½ cup egg beaters
  • 1 cup cheese (shredded and reduced fat)
  • 1 tsp chilli powder
  • ½ tsp cumin (ground)
  • ½ tsp salt
  • 2 cloves garlic (minced)
  • 8 oz green chilli pepper (diced)

Heat the oven to 400°F (200°C).

Using a large bowl, mix egg beaters, spices and ground beef all together.

Place a large piece of waxed paper on a flat surface and roll out the beef mixture forming a square.  Sprinkle the top with half of the cheese and half of the chilli peppers then roll the waxed paper to nicely form the meat and then remove it from the mixture.  Fold both ends of the meatloaf to make sure that the cheese and chilli won’t ooze out when cooking.

Put the loaf in a pan and top it with the rest of the cheese, chilli and sour cream and bake for about 45 minutes to an hour at 400°F.  Let it rest and then serve.
