My best egg salad recipe is actually super easy to make (and to eat!).
A coworker once taught me how to make egg salad, and I will be forever grateful to her. I was stunned to see how quick and simple it actually is!

My best egg salad recipe is GREAT to eat at work on your lunch hour.
You can combine it with a nice bed of crisp greens and some fresh tomato, or layer it onto a couple of slices of toasted whole grain bread for an Open Faced Egg Salad Sandwich:

How to make egg salad:
You will need:
- 2 hard-boiled eggs
- 1 tbsp mayonnaise (try my homemade mayonnaise recipe!)
- 1 large soft tomato, diced
- 2 large handfuls of mesclun greens or chopped lettuce of your choice
- Remove the peels from the hard boiled eggs. Place them in a bowl with the mayonnaise.
- Keep mashing the eggs with a fork and begin whisking the eggs and mayonnaise together:

However, if you do use store-bought mayonnaise, make sure to buy one that has no sugar, preservatives or mystery ingredients like “natural flavors.”
I recommend Canola Mayonnaise by Spectrum Naturals (you can find it in the health food section of most grocery stores):
Look at its ingredients list:
Compare this to the ingredients list for a standard mayonnaise brand like Hellmann’s. You’ll see about 50 ingredients, many of them unpronounceable chemicals. Ick!
Next, place your mesclun greens or chopped lettuce into a bowl:
Add the diced tomato:
Once the eggs and mayonnaise have been firmly whisked together into egg salad, place the egg salad on top of the tomatoes and greens:
It’s ready to eat. Enjoy!
